Beetroot, Carrot & Apple Salad with Goats Cheese & Pomegranate

Quick and Easy starter or light salad. You could add some chicken or more goats cheese to bulk it up for a main course
Ingredients
- 2 beetroots, grated
- 2 carrots, grated
- 2 apples, grated
- ½ pomegranate
- Goats Cheese
- Parsley, chopped
- 4 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp lemon juice
- Salt & Pepper
Instructions
- Lightly combine all the grated ingredients.
- For the dressing, combine the oil, vinegar, lemon juice and seasoning
- Add to the salad and toss lightly.
- To serve, place the salad on a plate, top with pomegranate seeds, goats cheese and parsley
