Tomato and Mozarella Salad with Basil Pesto
Ingredients
- 2 large ripe tomatoes
- 1 ball quality mozarella
Pesto
- 25g parmesan
- 1 small garlic clove
- 50g fresh basil
- 50ml extra virgin olive oil
- 50g toasted pine nuts
- salt / pepper
Instructions
- Slice the tomatoes and the mozarella. Sprinkle some salt on the tomatoes and set aside
- For the pesto, combine all the ingredients in a small blender
- Arrange the tomatoes and mozarella on the plate. Drizzle the pesto over and add a few drops of olive oil.
