Rosemary Roasted Plums with Lime Mascarpone

Rosemary Roasted Plums with Lime Mascarpone

Great light dessert that takes minutes to prepare
Ingredients

  • 4 plums
  • 4 sprigs rosemary
  • 2 tbsp brandy
  • 2 tbsp light brown sugar
  • 100g mascarpone
  • 50ml cream
  • Zest of 1 lime
  • 1 tbsp icing sugar
Instructions
  1. Preheat the oven to 180C
  2. Cut the plums in half and remove the stone
  3. Use a skewer to make a hole through the plums and then thread 1 rosemary stalk through each set of plum halves. To prevent the end of the rosemary from burning, you can place a small pice of tinfoil over it.
  4. Put ½ tbsp brandy and ½ tbsp sugar on top of each plum
  5. Place in the oven for 10 – 15 mins or until soft
  6. Mix the mascarpone, lime zest and icing sugar together.
  7. When the plums are soft, remove them from the oven, place them on a plate and top with mascarpone and some freshly grated lime zest
