Rosemary Roasted Plums with Lime Mascarpone

Great light dessert that takes minutes to prepare
Ingredients

- 4 plums
- 4 sprigs rosemary
- 2 tbsp brandy
- 2 tbsp light brown sugar
- 100g mascarpone
- 50ml cream
- Zest of 1 lime
- 1 tbsp icing sugar
Instructions
- Preheat the oven to 180C
- Cut the plums in half and remove the stone
- Use a skewer to make a hole through the plums and then thread 1 rosemary stalk through each set of plum halves. To prevent the end of the rosemary from burning, you can place a small pice of tinfoil over it.
- Put ½ tbsp brandy and ½ tbsp sugar on top of each plum
- Place in the oven for 10 – 15 mins or until soft
- Mix the mascarpone, lime zest and icing sugar together.
- When the plums are soft, remove them from the oven, place them on a plate and top with mascarpone and some freshly grated lime zest
